I wasn’t looking for an adventure ...
5 out of 5 stars
I wasn’t looking for an adventure ...
I bought the “Evo Duo Plus” after our rice cooker died. I really just wanted a rice cooker; I didn’t want an “adventure” ... but I sure got one. Since we got this about two months ago, we’ve almost completely stopped using our stove. This thing makes MONSTER stews! We’ve tossed out the recipe books, and we just wing it now. Some stew-making hints. First, always cut and season the meat (Montreal Steak seasoning makes for easy seasoning and hearty final broth), then use the sauté function to sear the meat. We use the “Level 4” (out of 6) on the “Custom” selection on the Sauté feature. This sears meat well without too much smoke. And definitely try butter (instead of olive oil) and minced garlic when searing. Second, ALWAYS deglaze after searing. Otherwise you’ll get the dreaded “BURN” error. Third, experiment with the broth. Instead of just beef or chicken broth, we’ve used picante sauce, canned Rotell tomatoes, and even added dabs of tomato paste. The results were excellent. Fourth, cut up your fresh vegetables in large, square-ish chunks - not strips or small pieces. If the pieces are too small, they cook down to mush under pressure. And long strips tend make for spoon-unfriendly eating. We’ve used green peppers, red peppers, potatoes, broccoli, onions, zucchini, rice, groat oats, and even sweet potatoes in our stews. (Avoid frozen stew veggies ... they were terrible) Another huge hit while entertaining was Bourbon BBQ Pork Sliders! (Google the recipe). It’s raw pork loin pressure-cooked in bourbon whiskey and lots of spices, then shredded and placed onto Hawaiian buns with pepper jack cheese, and then basted in butter & spices and browned in a conventional oven. Unbelievably good! I would NEVER have attempted this .. until I got this Instant Pot! Another thing this does well is CHEESECAKE. I detest cheesecake, and had NEVER made one before getting this Instant Pot. But I had read on several sites that Instant Pot cheesecake was super-easy and (mostly) foolproof. And it’s true. It was so easy that we made Rolo-Nutella cheesecakes and Caramel Pumpkin Pecan cheesecakes as holiday gifts this year. (Google those cheesecakes for the recipes). They were a HUGE hit with the neighbors! (But I still hate cheesecake nonetheless). One pic is from a neighbor who served up our cheesecake at her Christmas dinner. We also did something daring for breakfasts. We bought a 15-pound sack of groat oats, and started making groat oats each morning. After the pressure cooking is done, we add a spoonful of canned pumpkin, a teaspoon of pumpkin-pie spice, and brown sugar (to taste). And we often add dried cranberries to the oats before cooking .. awesome flavor! One thing I don’t like - Instant Pot does not yet sell extra “inner pots” for this model. (Caution: the inner pots for other models supposedly do NOT work with the “Evo Duo Plus”).

I bought this 6qt after using my 3qt for 2 months cuz renovating kitchen and don’t have a range. It’s just 2 of us, but 3 qt was enough for the meal and not much left over. I saw this new version and liked the added handles on the inner pot, the flat bottom inner pot for use on stove and induction stove, and the position of the lock/release button.

I first bought at Bed Bath and Beyond to get 20% off, but it wasn’t functioning properly (spoke to IP support to confirm). I got a replacement from BBB and it was worse than the first one. Got a refund and ordered here on Amazon.

It gets to pressure faster than their other models, and feels safer. It has a sous vide preset button so I looked on Youtube to find out about this method. OMG, made the best Filet mignon I’ve ever had.

It’s very versatile. I’ve made great hard boiled eggs; the BEST yogurt -tastes fresh and clean; fall-off-the-bone baby back ribs; whole -chicken noodle soup; sous vide filet mignon, rib eye, porter house and then used the pot to sear it, beef stew; and baked a cheesecake that was wonderful (more like a cream cheese pie than dry NY style).

My beef stew typically takes 7 hours in a dutch oven to fully develop the flavor and tenderness and usually tastes better the next day. In the IP, it took a total of 3 hours. I thought I’d have to wait til the next day, but unbelievably the flavor and thickness were perfect. My ribs typically take 3 hours. IP 55 mins and are moister! Making yogurt with a cold start and 2 ingredients takes 8 hours and is so delicious and tastes fresh and clean.

There is a learning curve so check out Youtube, join the Facebook community, and enjoy. I’ve never been interested in cooking, but I am hooked and look forward to trying new recipes and cooking techniques. I don’t know if I even need the new 30” range I’m putting in my renovated kitchen, haha!

If you buy this, I hope you get a fully functioning unit and find cooking in it as fun and pleasing as I have experienced!

I think there are a lot of mixed/negative reviews on early failure of the equipment due to improper use of the cooker.
It is so important to carefully examine the whole device BEFORE using. READ the WHOLE instruction book. (it is mostly pictures) There is important instruction on the pressurizing/depressurizing mechanism.

Pictured is my very FIRST recipe made from leftover turkey, white rice, celery, carrots, and onions. What a fantastic way to warm up during a cold day and make use of leftovers!! It was absolutely delicious.

The ability to cook a meal that would otherwise take hours but instead takes just an hour or less is great if you want to meal prep, last minute get togethers, are busy/working, etc. The six quart is good for three-four adults. There is a fill limit for the pressure cooker setting. Its versatility is unmatched.

I have no complaints - if there were one, it would be portability. The device is a high-tech equipment, so I don't think it would travel well like a standard crockpot/slow cooker. I'm sure it has sensors and the steam doesn't seem safe to travel under high pressure unless you release it prior to transport. Plus the lid is completely detachable - God forbid you misplace it or someone drops it.

Otherwise this is an excellent, quiet, efficient, healthy, economical, and technologically savvy way to prepare homemade meals FAST.

    Tips:
    1. to avoid burning your finger with hot steam, take a chopstick and move the vent tab instead. Do not just switch the tab all the way, because the rush of steam is fairly violent. Plus if you have low ceilings you'll have a problem eventually. Practice adjusting the vent button so you can push it halfway to depressurize a little at a time.

    2. Do not add things that expand all the way to the fill line like rice, pasta, beans. Underfill by at least half.

    3. Buy this: Better Than Bouillion. It will season your water with beautiful broth flavorings evenly! Better than buying stock. (if you make your own, nothing better than the instant pot!)

    4. Always cook with kosher salt or sea salt - it has complete solubility so it will evenly season your food unlike iodized table salt.

5.0 out of 5 stars Excelente opción para cocinar una gran variedad de alimentos, seguro y practico
Reviewed in Mexico on December 15, 2020
